Apiterra raw honey has never been heated or filtered.

Never heating and never filtering is the best way to preserve the natural minerals, vitamins, and enzymes found in raw honey as it exists in the beehive.

Never heated: when honey is heated above the average maximum temperature of a typical beehive (95 degrees Fahrenheit), most of the natural enzymes of honey are destroyed. Therefore we choose to not heat our raw honey, unlike other raw honey producers.

Never filtered: more than ¾ of  honey that is sold  is filtered (Liquid), in order to remove all the pollen and beeswax, mostly for cosmetic reasons, sometimes to hide the origin. We like our raw honey to be real, so we choose to keep these elements, especially because pollen contains many beneficial vitamins.

MYTH: Crystallized honey is adulterated (spoiled) or contains sugar.

FACT: Many assume that crystallized honey is adulterated or ‘spoiled.’ This is absolutely not so. Real unheated and unfiltered raw honey crystallizes. The crystallization process is natural and spontaneous. Pure, raw and unheated honey has a natural tendency to crystallize over time with no effect on the honey other than color and texture.

Many commercially sold honeys will not crystallize because they have been ultra-filtered  during their processing. Ultrafiltration removes all particles, and so these honeys contain no pollen and other healthy benefits . 

Natural raw honey does not spoil and unlike fake honey it will naturally crystallize (become more solid with honey crystals) but remains safe for consumption.

Crystallization occurs because of the natural qualities inside. The natural sugars in honey (glucose and fructose) will bind together and begin to form little crystals, which can start making your honey harder. With differing blends, some honey will begin to crystallize faster than others.

When honey crystallizes, it is still as nutritious and sweet as ever! In fact, the crystals prove that your honey is high quality and hasn’t been processed. It means that nutritious pollen hasn’t been filtered out and important enzymes haven’t been damaged by pasteurization.  Apiterra Honey is more likely to crystallize, because we do not filter or heat our honey at high temperatures (pasteurize). 

What's more, the crystallization of honey actually preserves the flavor and quality characteristics of your honey. 

Crystallized honey also tastes richer. When the honey is in a crystallized state it takes longer to melt on your tongue, allowing all of your taste buds to activate and pick up on the subtleties.

To get your honey back to a smooth consistency, gently warm the jar in a pot of warm water and stir.  If you heat and cool pure honey, you will alter the taste and kill all healing and nutritional values.
