Raspberry Honey Peanut Butter Protein Balls

Most of us don’t get enough protein in our daily life. No matter your diet or lifestyle, sometimes it’s hard to fit in that extra boost to your day, and eating more protein makes a huge difference. Hair, skin, nails, energy, mood! Protein balls are the perfect trick for fighting off an energy dip and giving yourself a guilt-free treat, any time of day.

What if I told you these little babies are unbelievably sweet, packed with nutrients and stripped down to the most basic, healthy and tasty ingredients. Perfect for an on-the-run breakfast, for combating that afternoon crash, or for a late-night snack that satisfies your sweet tooth.

I put a twist on your simple, traditional protein ball by subbing normal honey with Apiterra Honey with Raspberries. This switch added a unique and crazy delicious element to your typical protein balls, adding a little sweet tartness that almost tastes like eating a slice of raspberry pie!

And guess what? Making them takes like – 10 minutes. And then you can enjoy these guys for days or the rest of the week! Come on. You know you want to.

Prep & Cook Time = 10 minutes  // Serving Size = about 5 balls

INGREDIENTS:

½ Cup Oats

1/3 Cup Peanut Butter (or other nut butter)

1-1/2 Tbsp of Coconut Oil (to texture)

½ Tsp Vanilla

¼ Cup Apiterra Honey with Raspberries

*This is a single serving size, or a size to share with your sweetheart. But these protein balls are awesome to have on hand! So double or triple the recipe, refrigerate, and pop one in your mouth before running off for a long day!

DIRECTIONS:

-Gather oats, peanut butter, vanilla, and Apiterra Honey with Raspberries

-Combine those ingredients with coconut oil, adding more depending on desired texture

-Mix together using a blender for just about 30 seconds, or to desired texture

-Make sure you get every bit of your delicious combination out of the blender

-Use your hands (don’t be afraid to get dirty – trust me, you’re going to want to lick your hands afterwards) create small balls, as many as you’d like, but I usually make them donut-hole sized

-Set all on a plate or dish and refrigerate for at least a half hour

-Keep refrigerated until eating each one
